Beet Hummus is a wonderful dip to serve with pita chips, bread, or to use as a spread. The vibrant red color is so beautiful, healthy and delicious when slathered across a piece of toast, with avocado slices placed on top, a few small tomato halves scattered about, and some sprouts added as the finishing touch.

Beets are a delicious source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. Some studies show that beets may improved blood flow, lower blood pressure, and increased exercise performance, so go ahead and eat your beets!

Beet Hummus

Servings 1 Cup

Ingredients
  

  • 1 large or 2 small red beets, about 1 ½ cups cubed
  • 1 cup Cannellini or white beans
  • 2-3 tablespoons olive oil
  • 1 tablespoon tahini
  • 1 clove garlic
  • Optional: a squeeze of lemon

Instructions
 

  • Place all of the ingredients into a food processor and blend until smooth.
  • Season generously with salt.
