We are often intimidated to buy some of the more exotic fruits and vegetables that are at our local farmers markets and grocery stores. Studies have found that eating a wide variety of whole, plant-based foods is medicine for our gut biome. Eating loads of colorful produce is what our bodies thrive on. The problem is that people often don’t know how to make a meal of these goodies.
Quinoa is filled with great protein and xxx. I used that as the base for this bowl to give some satisfying body to the dish. I made a light poppy seed dressing, made with a squeeze of orange juice to give it just a hint of sweetness. The bitter greens of the arugula are great for digestion and the fruits and berries are loaded with vitamins and phytonutrients. So skip the sugary cereals for breakfast and eat this instead. You’ll be happy you did.
Fruit and Quinoa Power Bowl
Ingredients
- 2 cups cooked quinoa
- ½ orange, juiced
- 1 ½ teaspoon poppy seeds
- 3 tablespoons olive or avocado oil
- 1 tablespoon white balsamic or sherry vinegar
- 1 dragon fruit, sliced and cut in wedges
- 1 banana, sliced
- 1 mango, cubed
- 1 cup arugula
- 6-8 blackberries
- 6 cherries, halved and pitted
- ¼ cup sprouted pumpkin seeds
Instructions
- Place 1 cup of the quinoa in a bowl.
- Arrange fruit on tope of quinoa.
- Drizzle with dressing and serve.
