Luscious plums are so beautiful to bake with. The tart skin giving a little bite into the sweetness of the fruit’s flesh is always surprising and delicious. Plums are also loaded with over 15 nutrients, fiber, and antioxidants, and the cake is as pretty as it is delectable, and it’s a breeze to make. It is gluten, sugar, and dairy free. It’s made with gluten-free flour (I used Bob’s Red Mill Gluten Free 1-to-1 Baking Flour) and granulated brown Monkfruit to sweeten it. You can find Monkfruit in most healthy grocery stores, or you can find it online. It is a natural sweetener that contains antioxidants, and it doesn’t raise blood sugar. So while it may taste a bit naughty, it isn’t!
Plum Olive Oil Cake
Gluten-Free, Sugar-Free, and Dairy-Free
Ingredients
- 1/2 olive oil
- 2/3 cup granulated brown Monkfruit
- 3 large eggs
- 1/2 teaspoon vanilla
- 1/2 teaspoon almond extract
- 1 ½ cups GF flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom
Instructions
- Preheat oven to 350.
- Grease and flour a 9-inch baking pan.
- Slice 4-5 plums in thin wedges and set aside.
- Place the olive oil, Monkfruit, eggs, vanilla, and almond extract in a large bowl and whisk together.
- In another bowl, add the flour, baking powder, salt, and spices. Stir to combine.
- Add the dry ingredients to the egg mixture.
- Measure one cup of plum slices and add them to the cake batter.
- Gently fold the plums into the batter.
- Pour the batter into the prepared pan.
- Arrange the remaining plum slices over the top of the cake batter.
- Place cake in the oven and bake for 45-50 minutes.
